Wonder how a bamboo like plant turns into a sour fluid that is a perfect partner for your street food cravings? Consolacion Sugar Mill known as "Dadapilan", found in Brgy. Vakante in Binalonan, Pangasinan will show you a glimpse of the process in making sugar canes into vinegar, sugar and even wine. Process starts with harvesting the sugar cane by removing the leaves and cutting it into chunks. Next, it will be brought to the mill and a machine will take care of shredding and squeezing the crop until a fluid is extracted and goes directly to a storage barrel. The extracted fluid will be filtered and boiled using the left over sugar cane husks from the shredding process, as a firewood for cooking to prepare them for fermentation. Depending on the fermentation process that a vinegar, wine and a raw material of sugar is produced. Since early 80's Consolacion family is catering their plantation to sugar cane farmers by renting their machine for milling. Peak season for milling is on March/April and September/October. Every milling season, the plantation can produce 360 liters of vinegar delivered to various towns of Western and Southern part of Pangasinan. They also have regular buyers from the Northern part of Luzon including La Union.
