This is a 100-year old bakery, founded in 1919 by Ambrosio Lozada, the father of the internationally known violinist Carmencita Lozada and painter-printmaker and singer Manolo Lozada. The bakery’s name – which means “untouchable” - was the pen name of Philippine hero Jose Rizal in the publication La Solidaridad. Pasig’s first known panaderia continues to sell well-loved Filipino breads made the traditional way, using a pugon or wood-fired oven, such as pandesal, bicho bicho, pan de coco, monay, and Spanish breads. Today, they have also become known for their giant Brazo de Mercedez – a rolled cake made from a sheet of soft meringue with custard filling. They also invented a square biscuit called Di Ko Akalain (translated means “I did not expect this”), a recipe that their bakers stumbled upon when they made a mistake with one of their recipes but unexpectedly found it Delicious.
